Caprese Pesto Cottage Cheese Toast

This recipe replaces mozzarella with cottage cheese for a big boost in protein.

Inspired by a classic Caprese salad, this quick and satisfying savory breakfast substitutes protein-packed cottage cheese for the standard mozzarella. Depending on the bread type, each serving delivers 16 to 20 grams.

Cooks' Note

High in both fiber and protein, 100% sprouted-grain bread is a great option for a filling meal. One slice typically contains four to five grams of fiber and five to six grams of protein.
