Herby Green Pea Egg Bites

Nothing if not versatile, this recipe can be adapted to whatever you have on hand.

Fluffy and tender like a proper frittata, these homemade egg bites will save you money and time in the morning. You can switch up the veggies and herbs based on what you have on hand—just keep the measurements the same. Pair with a piece of fruit for a great grab-and-go breakfast.

Ingredients

2

cups Just Egg or 8 whole eggs

½

cup soft silken tofu or ½ cup cottage cheese

½

tsp. salt

Fresh cracked pepper, to taste

½

tsp. garlic powder

½

cup shredded mozzarella

½

cup frozen peas, slightly thawed

½

cup fresh parsley, basil, or cilantro, chopped

Preparation

  1. Step 1

    Preheat oven to 350°F. Line a muffin pan with parchment or silicone liners.

    Step 2

    Place the Just Egg (or whole eggs), tofu (or cottage cheese), salt, pepper, and garlic powder in a small blender (or use a blending cup and immersion blender).

    Step 3

    Pour the egg mixture into a medium-size bowl and mix in the mozzarella, peas, and herbs. Divide among the eight muffin cups and bake for 18 to 24 minutes until golden around the edges. The tops should feel dry, but they should still be just a touch jiggly.

    Step 4

    Remove the egg bites from the oven and let cool in the muffin pan for 10 minutes to firm up. Then, transfer to a wire rack. Enjoy immediately or let cool fully before refrigerating in an airtight container for up to three days.
